If this is either of your "first" cruises, I would not recommend it being a transatlantic cruise. Some people just don't like cruising, for one reason or another, and not liking being at sea is not something you want to find out on 2nd day of a 12+ day transatlantic crossing. For a first cruise we recommend 7 days or less, at that point you have a good idea if longer cruises are something you'd be interested in.
If you're both veteran cruisers than a transatlantic cruise could be fun, but again it is not for everyone. A transatlantic cruise is not ideal for everyone due to its long duration at sea which can feel isolating with the limited port stops and vast ocean views. For those seeking frequent excursions or more fast-paced itineraries, the slow pace and lack of diverse destinations may disappoint.
A 14 day Transatlantic cruise form Florida may only visit 2 or 3 ports, most of your time is in open water. In contrast, a flight to Rome, Italy and then a 14 day Mediterranean cruise may hit 10 ports (7 countries). Which may be a lot more interesting for your college grad daughter.

Unless you are really set on a specific cruise line or ship, I would recommend deciding on where you want to leave from and what port destinations you want, from there you can figure out what cruise lines offer those routes and on what dates.
