Ingredients:

  • 1 lb fresh calamari (tubes and tentacles), cleaned and cut into rings
  • 1 cup buttermilk
  • 1 ½ cups all-purpose flour
  • ½ cup cornmeal
  • 2 tsp Old Bay seasoning
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil for frying
  • Fresh lemon wedges
  • Marinara sauce for dipping

Instructions:

    1. Soak calamari in buttermilk for 10–15 minutes (this helps tenderize and helps coating stick).
    2. In a large bowl, mix flour, cornmeal, Old Bay, garlic powder, salt, and pepper.
    3. Heat oil in a deep fryer or large pot to 375°F (190°C).
    4. Drain calamari from buttermilk, then toss in the seasoned flour mixture until well coated. Shake off excess.
    5. Fry in batches for 2–3 minutes until golden brown and crispy. Do not overcrowd.
    6. Drain on paper towels. Season with a little extra salt immediately after frying.
    7. Serve immediately with lemon wedges and warm marinara sauce.
