Ingredients:

  • 4 filet mignon steaks (6–8 oz each)
  • 2 tbsp olive oil
  • Salt and cracked black pepper
  • Red Wine Reduction

  • 1 cup cabernet or merlot
  • 2 shallots, minced
  • 2 cups beef stock
  • 2 sprigs fresh thyme
  • 3 tbsp cold butter
  • Roasted Garlic Mashed Potatoes

  • 2 lbs Yukon gold potatoes
  • 1 whole garlic bulb
  • ½ cup heavy cream
  • 4 tbsp butter
  • Salt and white pepper

Instructions:

    1. Season filets generously.
    2. Sear in hot oil 3–4 minutes per side for medium-rare.
    3. Rest 5 minutes.

    Red Wine Reduction

    1. Sauté shallots, add red wine and thyme, reduce by half.
    2. Add beef stock and reduce until thickened.
    3. Finish with butter.

    Roasted Garlic Mashed Potatoes

    1. Roast garlic at 400°F for 30 minutes.
    2. Boil and mash potatoes with cream, butter, and roasted garlic.
