Disney Cruise Line's Filet Mignon with Red Wine Reduction & Roasted Garlic Mashed Potatoes Recipe

Ingredients:
- 4 filet mignon steaks (6–8 oz each)
- 2 tbsp olive oil
- Salt and cracked black pepper
- 1 cup cabernet or merlot
- 2 shallots, minced
- 2 cups beef stock
- 2 sprigs fresh thyme
- 3 tbsp cold butter
- 2 lbs Yukon gold potatoes
- 1 whole garlic bulb
- ½ cup heavy cream
- 4 tbsp butter
- Salt and white pepper
Red Wine Reduction
Roasted Garlic Mashed Potatoes
Instructions:
- Season filets generously.
- Sear in hot oil 3–4 minutes per side for medium-rare.
- Rest 5 minutes.
- Sauté shallots, add red wine and thyme, reduce by half.
- Add beef stock and reduce until thickened.
- Finish with butter.
- Roast garlic at 400°F for 30 minutes.
- Boil and mash potatoes with cream, butter, and roasted garlic.
