Ingredients:
- 1 Garlic Clove, crushed
- 1 Lemon – juice only
- 3 Tbsp of Capers, chopped
- 6 Anchovy Fillets, chopped
- 250g/9oz Black Olives, pitted
- Fresh Parsley, small bunch chopped
- Salt and Pepper, to taste
- 2-4 Tbsp Extra Virgin Olive Oil
Instructions:
- Thoroughly rinse the olives in cool water.
- If using a food processor, stop to scrape down the sides of the bowl until the mixture becomes a coarse paste, approximately 1 to 2 minutes total.
- Transfer to a bowl and serve.
