Ingredients:

  • 1 Garlic Clove, crushed
  • 1 Lemon – juice only
  • 3 Tbsp of Capers, chopped
  • 6 Anchovy Fillets, chopped
  • 250g/9oz Black Olives, pitted
  • Fresh Parsley, small bunch chopped
  • Salt and Pepper, to taste
  • 2-4 Tbsp Extra Virgin Olive Oil

Instructions:

  • Thoroughly rinse the olives in cool water.
  • If using a food processor, stop to scrape down the sides of the bowl until the mixture becomes a coarse paste, approximately 1 to 2 minutes total.
  • Transfer to a bowl and serve.
