Ingredients:
- 2 qt Beef Stock
- 1 tsp Red Wine Vinegar
- 1 Bay Leaf
- 12 oz Navy Beans
- 1 tsp Chopped Parsley
- 4 oz Chopped Onions
- 1/2 oz Chopped Garlic
- 1/2 c Diced Celery
- 1/2 c Diced Carrots
- 1/2 c Diced Leeks
- 1 Sprig Fresh Oregano
- 1 Sprig Fresh Thyme
- 1 tbsp Olive Oil
- Salt & Pepper To Taste
Instructions:
- Soak navy beans in water for 10 - 12 hours.
- Sauté garlic, bay leaf, onions, carrots and celery in oil for a few minutes.
- Boil beans in beef stock, add vegetables.
- Simmer for two to three hours.
- Season with salt and pepper.
- Finish with red wine vinegar, chopped parsley, thyme and oregano.
