Ingredients:
- 6 Ripe Tomatoes, peeled and chopped
- 1 Onion, (purple or green) finely chopped
- 1 Cucumber, peeled, seeded, chopped
- 1 Sweet Red Bell Pepper, seeded and chopped
- 2 Stalks Celery, chopped
- 1-2 Tbsp Chopped Fresh Parsley
- 2 Tbsp Chopped Fresh Chives
- 1 Clove Garlic, minced
- 1/4 Cup Red Wine Vinegar
- 1/4 Cup Olive Oil
- 2 Tbsp Freshly Squeezed Lemon Juice
- 1 Tsp Worcestershire sauce (omit for vegetarian option)
- 4 Cups Tomato Juice
- 2 Tsp Sugar
- 6 Drops of Tabasco Sauce (or more) to taste
- Salt and Pepper to taste
Instructions:
- Place all ingredients (except tomato juice) in a food processor and mix quickly. Ingredients should remain grainy not pureed.
- Add tomato juice and check seasoning.
- Allow flavors to blend by sitting (refrigerate overnight if possible). To refrigerate - place in a non-metal, non-reactive storage container and cover tightly.
- Serve chilled.
