Ingredients:

Gazpacho:
- 2 cups (480 ml) tomato juice
- 1/2 cup (120 ml) water
- 1/4 cup (60 ml) red wine vinegar
- 1/4 cup (60 ml) extra virgin olive oil
- 1 small red onion, chopped
- 2 cloves garlic, chopped
- 1/4 cup (60 g) breadcrumbs
- 1 teaspoon (5 g) ground cumin
- 1 teaspoon (5 g) celery salt
- 1 tablespoon (15 ml) Worcestershire sauce Tabasco sauce, to taste
- 1 French baguette, sliced
- 2 tablespoons (30 ml) extra virgin olive oil
- 1 small red onion, diced
- Parsley

Instructions:
- Preheat oven to 350 degrees F or 175 degrees C
- Mix all ingredients into a large glass bowl. Cover and refrigerate overnight.
- For crostinis, brush bread slices with olive oil. Place on a baking sheet and bake in the oven until golden around the edges.
- Pass gazpacho through a sieve and pour into individual martini glasses
- Garnish with red onion and parsley. Serve with crostinis and assortment of olives
