Ingredients:

    Lamb Meatballs:
  • 1 lb Ground Lamb Shoulder
  • 2 tsp. Shallots small, Brunoise
  • 2 tsp. Carrots small, Brunoise
  • 2 tsp. Celery small, Brunoise
  • 1.5 oz. Milk
  • 1 tbs. Egg Whites
  • 0.75 cups White Bread
  • 2 tsp. Dates, finely chopped
  • 0.25 tsp. Cumin Powder
  • Pinch of Turmeric powder
  • Pinch of Cayenne Powder
  • 0.25 tsp. Onion Powder
  • Pinch of Cinnamon Powder
  • 2 tsp. Garlic, finely chopped
  • 0.25 tbs. Oregano, finely chopped
  • Salt and pepper to taste

  • Red Onion Marmalade:
  • 1 lbs. Red Onions, julianne
  • 1 pc. Red Beets, cut thick slices
  • 1.5 oz. White Sugar
  • 1.5 oz. Red Wine Vinegar
  • 0.75 cups Red Wine
  • 0.5 pc. Cinnamon Stick
  • 1 pc. Star Anise
  • Salt and pepper to taste

  • Greek Yogurt:
  • 0.5 cup Greek Yogurt
  • 1 tsp. Fresh Oregano, finely chopped
  • 1 tsp. Fresh Cilantro, finely chopped
  • 1 tsp. Fresh Mint, finely chopped
  • 1 tsp. Fresh Parsley, finely chopped
  • 2 tsp. Lemon Juice, freshly squeezed
  • Salt and pepper to taste

Instructions:

    Lamb Meatballs:
  • Soak bread with milk.
  • Saute garlic, shallots, carrots and celery, add herbs and dates and cook until dates are soft.
  • In mixing bowl put Ground Lamb, soaked bread, egg whites, sauteed vegetables, dates and spices.
  • Add salt and pepper.
  • Mix everything together by folding with your hands.
  • Make 1 oz. meatballs (about 1 in. in diameter).
  • In a large saute pan, heat oil and sear the meatballs to a golden color.
  • Roast meatballs in a 350 degree oven until internal temperature reaches 165 degrees F.

  • Red Onion Marmalade:
  • In a large pot combine the wine, sugar, vinegar, cinnamon and star anise.
  • Then add the sliced onions and beets and bring to a boil.
  • Cook until the onions reach the consistency of marmalade.
  • Remove the cinnamon stick, star anise and beets.

  • Greek Yogurt:
  • Mix all chopped fresh herbs with Greek yogurt and adjust seasoning.

  • Plating 1 Portion:
  • 3 pcs. Seared Lamb Meatballs
  • 2 tbs. Greek Yogurt Sauce
  • 1 tbs. Onions Marmalade
  • 1 pc. Dates cut in half
  • 1 pc. Fried Basil, for garnish
