6 Ripe Tomatoes, peeled and chopped
1 Onion, (purple or green) finely chopped
1 Cucumber, peeled, seeded, chopped
1 Sweet Red Bell Pepper, seeded and chopped
2 Stalks Celery, chopped
1-2 Tbsp Chopped Fresh Parsley
2 Tbsp Chopped Fresh Chives
1 Clove Garlic, minced
1/4 Cup Red Wine Vinegar
1/4 Cup Olive Oil
2 Tbsp Freshly Squeezed Lemon Juice
1 Tsp Worcestershire sauce (omit for vegetarian option)
4 Cups Tomato Juice
2 Tsp Sugar
6 Drops of Tabasco Sauce (or more) to taste
Salt and Pepper to taste
Instructions:
Place all ingredients (except tomato juice) in a food processor and mix quickly. Ingredients should remain grainy not pureed.
Add tomato juice and check seasoning.
Allow flavors to blend by sitting (refrigerate overnight if possible). To refrigerate - place in a non-metal, non-reactive storage container and cover tightly.
Serve chilled.
