Ingredients:

  • 6 Ripe Tomatoes, peeled and chopped
  • 1 Onion, (purple or green) finely chopped
  • 1 Cucumber, peeled, seeded, chopped
  • 1 Sweet Red Bell Pepper, seeded and chopped
  • 2 Stalks Celery, chopped
  • 1-2 Tbsp Chopped Fresh Parsley
  • 2 Tbsp Chopped Fresh Chives
  • 1 Clove Garlic, minced
  • 1/4 Cup Red Wine Vinegar
  • 1/4 Cup Olive Oil
  • 2 Tbsp Freshly Squeezed Lemon Juice
  • 1 Tsp Worcestershire sauce (omit for vegetarian option)
  • 4 Cups Tomato Juice
  • 2 Tsp Sugar
  • 6 Drops of Tabasco Sauce (or more) to taste
  • Salt and Pepper to taste

Instructions:

  • Place all ingredients (except tomato juice) in a food processor and mix quickly. Ingredients should remain grainy not pureed.
  • Add tomato juice and check seasoning.
  • Allow flavors to blend by sitting (refrigerate overnight if possible). To refrigerate - place in a non-metal, non-reactive storage container and cover tightly.
  • Serve chilled.
